Bow Pasta Salad

 

Ingredients

2 cups cooked bow pasta
1/2 cup cherry tomatoes, halved
1/4 cup red onion, slivered
1/2 cucumber, chopped
1/4 cup red bell pepper, chopped
1 cup spinach leaves, chopped
1/2 cup whole Black olives
Feta Cheese

Directions

Cook and cool bow pasta.  Toss pasta with remaining ingredients.


Dressing

1/2cup olive oil
1/4 cup white vinegar
1 tablespoon lemon juice
1 teaspoon sea salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon dried or fresh parsley
1 teaspoon Dijon mustard
1 teaspoon honey

Combine all ingredients and whisk until thoroughly blended.

NOTE:  Any choice of dressing can also be used with this salad.
