
Bacon Spaghetti

Ingredients
2 tablespoons olive oil
6-8 slices of bacon, cut in matchstick-size pieces 1/2 cup dry white wine 2 large fresh tomatoes, chopped 1/2 teaspoon fresh thyme leaves 1 package thin spaghetti (12 ounces) Salt Black pepper Grated Parmesan cheese

Directions
Heat olive oil in frying pan and cook onion and bacon over medium heat until bacon begins to brown. Add the wine to pan and increase heat; let cook rapidly until liquid boils off. Add tomatoes, thyme, salt and pepper. Cover and let cook over medium heat for 10-15 minutes. Turn heat to lowest level to keep warm while you prepare pasta according to package directions. Drain pasta and add to skillet; toss spaghetti in the sauce. Let everyone add Parmesan cheese as they desire. TIP 1: You can use as much or as little bacon as you desire.
TIP 2: Use whatever wine you have on hand. Or, if you prefer, omit the wine altogether.
TIP 3: Use 1/4 teaspoon dry thyme leaves if you do not have fresh thyme. I suppose you could use basil or oregano also.
TIP 4: For a saucier dish, you can use less spaghetti (1/2 package) or increase all of the sauce ingredients to make more sauce.
TIP 5: You can use canned tomatoes instead of fresh, however, this dish is best when made with fresh tomatoes.
TIP 6: If pork is not in your diet, try using chicken or shrimp. |
